Allah could have created Eve from a separate soil as He created Adam, but He created her from his rib.

He, glorified be He, wanted Adam to feel that Eve was a part of him so that he would protect her, and for Eve to feel that Adam was her origin, so she would long for him like a traveler longs for his homeland. This was the Creator's perfect way to ensure love between them forever.
